Is there a proven way to coat the panels other than Powder coating? I'm Leaning towards powder coating but thought I would ask.

Powder coat, paint, anodizing, Shark Hide, or leave em natural.
I'd go with powder if I were to do it again!

I'll be using U-POL Raptor, which comes in all sorts of colors, but the least expensive is BLACK.
It's a two part polyurethane that is used for truck beds.
I will be using on the back side of my body, but it could be used anywhere including the aluminum panels.

I like Rustoleum self etching primer and then their 'hammered' rattle can paint. It is pretty dang hard and is a lot easier to touch up later if needed because of the surface you get.
