Why not just drill a hole, weld a nut, and use a bolt with a jam nut on the pedal box?

That is what we do also. We don't weld a nut....it would be easier to adjust if it was welded, but it's pretty much a one-time adjustment and done, so I've never bothered to go thru the extra work of dragging out the welder since it's not really in a welding-friendly location anyway....we just put a nut on both sides of the panel.

I figured the advantage of in car adjustment by my self is worth the weld time.
I may have to drag the welder from under a pile stuff anyway. I have a really nice ECU/Power Cell/Puke tank bracket on order that I might also weld in.
