Those with Coyote engines what is your typical water temp?

Those with a Coyote 5L in a roadster, I was wondering what one would expect for a normal water temp for driving vs stop and go.

The answer is a little mixed. I'm at 1100+ miles on my Gen 2 Coyote. I agree with MisterAdam's experience. That is if you're monitoring the water temp at the Factory Five instructed port location, e.g. on the LH side of the engine at the front. I did about 50 miles last night and a lot of stop and go driving (Woodward Dream Cruise time in Detroit!). Outside temp was around 90 F. Highest I saw the water temp was about 85 C (about 185 F).

But the rest of the story is that sensor location, IMO, gives a slightly false reading. Of course I can't tell for sure without taking things apart. But just based on location I'm guessing that it's in the path of the return coolant from the radiator. Which might explain why it seems to indicate a somewhat lower temp.

The Coyote actually doesn't have a factory water temp sensor. Instead Ford uses a cylinder head temperature (CHT) sensor and infers water temp. It just so happens that I'm running an nGAUGE on my dash right now watching six different readings from the engine computer. One of them is CHT. That reading is almost always in the upper 190's. Including last night. I haven't seen it yet over 200 F. From everything I can tell, this is typical and a normal operating temp for the Coyote.

In the heat of the summer in Alabama I see between 70-85C. Highest ever after sitting still a while was 90. But as Paul says above that is dependent on the location we are using.

180 Oil also stabilizes around 180. Max all time water 210 stuck in traffic @ 98*F ambient.

EDIT: Never got install the shroud but do have Mike Everson's one piece front aluminum & the breeze top piece to seal the front side of the radiator to the nose opening.

Driving, no stop and go, at speeds between 30 and 70+, fifth gear, it most always stays between 165-175 even with AC on. In stop and go traffic it will climb to 210 with AC on but fan will keep it from going higher. After stop and go traffic it will cool back to the 165-175 range within a mile. BTW, the only time my oil temperature gets off the peg is in stop and go traffic and I have seen it as high as 240. It cools down faster than the engine when back to moving.

Not a cobra, but in my 2015 mustang, the cylinder head tell (see note above) runs 190-210.

250miles, 2nd gen Coyote. Once warm and fan is on I'm 80-82. No difference if I'm 70mph on highway or 10m in stop/go traffic. I'm running a fan shroud from Breeze though with a P/S cooler going through it. As Paul said, a lot probably has to do with the poor sensor location. On the gen 2 it took a little bit of adapter work to get it all connected and it stands outside the water path a little.

I've put 21,000 miles on my Coyote/MkIV in all types of conditions. Stop/start at 90F ambient, several hours tour through Wyoming at +100F, to an hour of full on tire stripping charity runs at the London Cobra Show. Like others, the dash mounted temp gauge rarely exceeds 80F (although its measuring temperature from a poor location on the engine), and the ECM monitored temperature I monitor with the Trinity-Diablo performance programmer has never exceeded 200F. I'm running the FFR supplied rad with the Breeze fan shroud and some custom sheet aluminum to direct all air through the rad.
