I think I've got this right but let someone else also confirm.
Right screw in is the oil temperature sensor.
Left screw in is the oil pressure sensor.

Yes left appears to be pressure right looks like temp. I am not super familiar with the ej207 but am venturing a guess that those are for aftermarket gauges as every Subaru motor I have seen has a pressure switch not a sensor. Looks like a sandwich adapter plate installed with after market sensors.

Depends on the gauge but most of them come with their own sensors so you could just replace the ones you have (assuming they have the same threads). Otherwise it sounds like a lot of trouble to characterize the sensors you have and see if they match up with a particular gauge. You'd have to measure the sensor's resistance or voltage range over some calibrated temperature range or pressure range - it can devolve quickly.
Most gauges come with specific sendeing units and are calibrated for the particular sender. If you plan to purchase extra gauges I would check to see if the ports on the sandwhich adapter are npt or bpt and get gauges with the appropriate taper on the sending unit.
