Chris, does the Engine Factory offer Webers as an intake option? How about stack-styled fuel injection?

Generally we don't deal with the Webers very often.
Have difficulty keeping their tune over time.

It has been 1 year and not a single call for the above mentioned 289. I have to assume there are not many people building the 289, and of those who are, most are installing roller 302's and calling it good.

That's what I did. I installed Mike Forte's Ford 306. Happy with my decision.

That's the plan for my 289 kit. Roller 302 based, but dressed like an older 289.

    Hola Chris,
I am looking for a "period correct" valve covers (302 engine), as shown in the Factory Five 289 USRRC Roadster engine. Does Engine Factory offer these valve covers?
    Thanks in advance.

They used the early 221, 260, 289 "round" valve covers. Nobody is making them - try junkyards. They had no holes since the 221/260 and early 289 added oil through the timing chain cover. Later Shelby American added filler/vents to them for the early race cars.

    I went with these

The gold, I've seen them used on original 289s.
They sell them in other colors.
