I have never heard of anyone using a pressure gauge, plan B might be a brake bias adjuster. I am using one it works good and you can adjust easily in the drivers seat.

For that to be valuable information, you would need a brake calculation tool to give the relative front/rear brake force with the tires, just knowing the pressure is not necessarily going to provide the needed information. I in the past have used a disk brake analyzer tool-A pressure device that you insert in-place of the pads to show caliper force which can be tested with the bias adjustment to see how the system responds and give a setup point when one changes brake parts and needs to get back to a certain point.

Sounds like something where you perform five layers of measuring and adjusting and, in the end, adjust the bias to suit how the car handles.
If you want to learn the bias pressures and all that for the fun of it, it's worth doing.
