Hmmmm...
Those look like three different colors?
Every time i google shelby Viking blue, different shades show up. It’s the color i’m Going with on my build if i can find one that is “correct.” Here is an original 1964 289 car that should be “Viking Blue”

That one in the middle looks like Superformance's version - they call it Portifino Blue.

Mine is Viking blue with Wimbldon white stripes. It's more blue than Portofino and lighter than Guardsman.

I picked my color in 1974, and painted the tailight panel on my car as a trial run. I sold the car shortly thereafter, and now that I have a FFR roadster, I’m going with the same color. It’s a little lighter than Viking blue, but I like it. I bought a rattle can and sprayed it on a painter’s test strip and it’s as I remember. It’s a 1973 Volkswagen color, Marathon blue metallic, L96M. Got the IRS in this week, it’s a roller.
How about this color?

1. Any color looks great on these cars, even some of the more wilder colors too.
2. I do think your best choice is the color that you really love the most so flip a coin if you are on the fence.
3. Better yet, if you have a better half (Meaning A Wife For Life) then let her make the choice since she'll be likely riding with you most of the time anyway.
4. As for me Black, Blue, Green or Red all work so our car will be bright red since that's the color my wife loves.
NOTE: She had a Red IROC-Z but and now drives a Red Challenger and that's the color shoe she tends to wear when we go out on the town so you get the picture.

Careful of a Ferrari color as they are very pricey. I also looked at one before settling on Viking. The one I looked at was lighter than the one you show an example of. I also considered Portofino for a long time but from what I understand there are multiple Portofinos and only one Viking. These cars look good in almost all colors, when I picked up mine from paint there was a beautiful ivy green that you do not see often. Then there is black that always looks good but you'll need to dust it continually. White with blue or black stripes looks great too. Red is not my color but I have seen a few really nice ones, personally I like red with black stripes but that is just personal preference. Good luck, you're going to need it.

Actually, I was told that Princess Blue was just renamed "Viking" for the Cobra - same color, according to a painter that I checked with back when I was investigating colors.
But you are right - I think that the Superformance color that they call "Portifino" is just their take on Princess / Viking.

These lighter blues look really nice. I think Portofino gives the car a great vintage look. If I ever do a 289, I think that would be it.
Be careful with color names. There are about a dozen different "Viking Blue" paints out there. I have also seen Wimbledon White anywhere from soft white to yellowy cream. I have three monitors at work. Guess what I get when I put a background picture up? Three slightly different hues. If you can go look at some cars and get the paint code, that is the best thing.
