Thanks guys!
I've done a little bit more in recent days.
Cut the dash in two
20160307_205014 by Michael Jaska, on Flickr
Mounted the air filter, just need to replace the blue coupling with a black one
20160307_205022 by Michael Jaska, on Flickr
Put in this little nifty thing, really easy to install too. Doesn't take USB data, just charges. Will need to put a regulator on the USB side I think.

Mounted speakers, put baffles on the backside and siliconed. Will also be covering this side with Dynamat (This is in the wheel well so all the protection it can get is smart I think)

Started electrical in earnest, started off with a little relay & electronics hub. It's got a turn signal module as well as a remote door locking module. Also put in those power bus bars below
20160308_162428 by Michael Jaska, on Flickr
Covered and wired the dash! This was pretty fun, I've got to say. Only a couple things...
1) the green indicator light I ordered to be my other turn signal is different than what came with the kit. Need to find a green one with the "dot" pattern, not the circle pattern. You can see the difference in the first photo
2) Need to figure out which of the leads on the A/C thermostat goes to the compressor and which goes to the switch. One lead says "C" and one says "L", so I have the "C" going to the compressor right now. Second photo
3) Gotta find some spacers for the front of the dash, especially for the headlight switch where you can see a lot of the metal stem coming out
4) Still need to put in a wiper switch, wire it and the headlights and indicator lights

The back of the dash

Did a few other various things...
-Cut off backup light switch from old tranny harness and put it on the trans.
-Found out I'll need to switch to a electrical speedo output due to Autometer gauges (I'm learning...slowly lol) I'll route it along with the backuplight switch.
-Mounted the amplifier for the speakers. Probably won't need that much power, but who knows.
-Put on the last heat shield needed in front of the drivers footbox so I can put on the headers finally
-Changed out the cork valve cover gaskets for rubber ones, filled engine with oil and break-in additive
-Installed accelerator cable, fit great and it works just right
-Fixed my build thread so the photos aren't as big haha

All right, here's the first start of Eloise! Takes a minute to get going.
Happy as can be right before the first start

As it sat right before. Notice the Coke can on the P/S pump. The cap kept popping off so I figured this might help? Haha

The cockpit

A few things about it:
1) Always do pre-start checks! Turned key to ignition (not start), waited for fuel pump, started smelling gas. Found out I never tightened down the rubber to hard lines... Fixed that and continued on with checks.
2) We had 3 amps being drawn with everything off. Unplugged the alternator and the draw went away. When we ran it the alternator (still unplugged) started smoking, so I think getting a new alternator will solve all of that. It was from the old mustang, and I both rebuilt and powder coated it, so there's a good chance I messed it up myself.
3) I honestly can't remember saying or looking at anything while it was going, all I could think was LOUD. I'm pretty sure I only looked at the Tach haha
4) We were trying to do a few things at once, my Dad was doing coolant and also seeing if he could get the timing
5) A little smoke came up from where the O2 sensors are welded in which is what we are yelling about in the video, we're thinking it's just slag or something burning off. Will look for it some more, but I tried to clean it after.
6) The accelerator is pretty touchy. I was trying to get to about 1800 rpm but it was really hard. I'm also a novice car guy, so that probably was part of it too
7) It started right up on the actual first try! I hadn't tested my starter switch/relay yet, and it just went perfectly. Didn't get to run it as long as I wanted. Will mount new alternator and put side pipes on for a longer run tomorrow.
Enjoy!

And a few other things:
Made what I call the "console" which has my radio, ignition, start button, and various other buttons (turn signals, fan, high beams, etc). This thing was a real pain, and took a long time. I 3D printed some corner pieces and fabbed the rest of it out of aluminum. The whole reason for the extra work is to get more room for the radio. It fits perfectly now.

Covered and ready to run
20160429_175051 by Michael Jaska, on Flickr
Finished all of the wiring except for the buttons on the console panel and the wiper switch.
20160430_134247 by Michael Jaska, on Flickr
Lets see, what else.
-Put on new spark plug wires
-Finished Dynamatting the cockpit. Will need just a little more for the transmission tunnel cover and odds and ends
-Mounted amplifier and speakers, hooked them up. Just need to wire up stereo and we should have music!
-Put in P/S fluid
-Put another DIY bracket on A/C compressor to give it more rigidity. I'll try and get a picture of this
-Covered a bunch of stuff in vinyl (dash, console, trans tunnel cover)
-Put in cup holders. Need a good way to hold them down still
-Moved e-brake handle to top of tunnel for easier access, will get some pictures for ya'll on this too. Need to shorten the cable and put new ferrules on though. Moving it will also make it easier for me to convert to undercar exhaust in the future.
-Did some rudimentary alignments of the wheels, after a quick call to Mark Dougherty I found out you can't align the car in the air... Probably shouldn't admit that, but this whole thing has been a brand new experience and my first car to work on Anyway, we aligned it a little more when it was on the ground
-Car sits about 3.5" off the ground, so about 1" too low. It certainly felt like it! Also the wheel was dangerously close to my speaker baffles. Anyone know how much these wheels will travel with a big bump? Will bring it up to 4.5"
-I'm not sure if a test drive around the neighborhood will be ok or not, I live in the suburbs and they can be sensitive about that kind of thing. We'll see
-Mounted the drivers seat. Might need to move it towards the tunnel

Still at it
Wow, it's been a while!
Since I've last posted on this thread, I've done the following (not really in order):
1) Put the body on with all latches, lights, etc...
2) Worked out a lot of kinks with the engine and timing. Runs great. Had to replace ignition module, and went ahead and replaced coil too. This is a donor build, after all. My next one will NOT be a donor.
3) Finished the dashboard and made new side dash pieces
4) Fabbed some aluminum access panels, and finished the footbox aluminum
5) Finished the headers and sidepipes. Wrapped/painted headers using DEI wrap & silicone paint.
Painted sidepipes with Ceramic rattle can paint. Both of these turned out much better than I thought they would.
6) Inspected, insured, and registered the car. If you have all of your stuff, it's a breeze. County office lady's eye were like saucers when she saw the pile of papers for it...
7) Fitted and mounted the rear hatch
8) Mounted a license plate holder with integrated camera and LED studs (to illuminate the plate)
9) Installed third brake light that works great with my Signal Dynamics turn signal module. Makes me feel much safer while driving
10) Installed the front license plate using a flip up/down holder. Only flips down if I manually do it for car shows or such.
11) Finished routing and wiring of A/C lines. All I have to do is vacuum and charge the system.
12) Aligned the wheels (twice!) and it drives like a champ. Will probably get a professional alignment done. This has proven difficult because the shops around me only do production cars and can't put in custom parameters. Anyone know of a similar production car alignment to use?
13) Aligned headlights, installed trim rings
14) Installed radiator aluminum
I've been driving it all around town, and does it get looks! Can't tell if it's because it's cool or that it has no doors... The girlfriend thinks it's the latter. So far on the road I've only had two issues, once the battery died and once I noticed the water temp was way high. I immediately found somewhere to park once it got past 210. It actually overflowed due to overheating, so at least THAT works correctly. Turns out the connector for the fan had come off. Since then, hasn't gone much above 180.
Below are some pictures, they'll be worth more than the above 1,000 words anyway...

JUST KIDDING. One of the oddest coincidences I've experienced. I had it parked in the driveway, heat-cycling the engine to cure the paint on the headers and sidepipes, when all of a sudden a semi-truck pulls up! I had a weird flashback to getting the kit... They open the door, and what do they bring out but a 250 GT! I was freaking out at that point. Of all things? All my neighbors came outside asking why I had this truck here and how long it would be. I told them it's not my fault, I'm just watching. Of course it had nothing to do with me, they were just trying to deliver another car. It just so happened they needed to take out the Ferrari to get to the other one, and I got some great pics as a result. Turns out (obviously!) that it's a kit as well on a Nissan 280Z frame, but still cool. The truck driver did not seem so enthused about my story about how my car came about because of this one
And finally, the all important First Drive with Mom. She loved it

And that's where she's at! Really enjoying the build at this point, and am hoping to be done before 2018

Thanks Mark!
Upcoming items to do when I'm home next:
-Doors and windows. I have a shaved handles kit I'm aiming to use, and will try and copy Seattledad's layout.
-Get a new windshield. Mine cracked in storage, and they are expensive... Am looking at 87 Jag XJ-S in junkyards
-Splash panels. This one has really been dogging me. I need these and the doors to go on longer trips and I know they are a lot of work. Will use CJBergquist and mtwarog as inspiration for these.
-Fill in ground seams with HSRF and really start body work. I'm just going to keep going with it and see if there's a point that I say "enough". I bought all of the materials already, might as well use them.
-Carpeting. Will first go to Home Depot and Lowe's to see what they have, then I might go elsewhere and online. Would like to spend < $100 on it though.
-Upholstering the hatch mini-trunk and the sides with more marine vinyl that I have left over from the dash and trans cover. Love that stuff, and should last forever...
-Install and wire rear view mirror and cameras. Plan is to have 3 cameras total but might go to 5. 1 rear, 2 front (one for parking, one to record), and will try to get 2 for blind spots. Will see how the visibility is after mirrors are installed. The idea is that whatever function I'm using will automatically pop up on the mirror. I think through some RCA switches it could be pretty slick. The recording camera will be in conjunction with a Raspberry Pi that will save videos of my drives and hopefully come in handy should an accident occur.
- Take body panels off after getting hood and other fitments correct and apply bed liner, put in the headliner, and then install again to get ready for final paint.
Any thoughts/recommendations are appreciated!
Michael

Ok, time for another update!
Mark and Matt Dougherty spent 3 days with me working on body work, and the body is actually at paint! I am going with a dark red metallic that almost perfectly matches the powder-coating I've done.
I can't thank Mark and Matt enough for their help and fellowship, they came right in and we worked our butts off to get the car ready for paint. Mark's experience and general knowledge of these cars has made this car possible for me. Matt is all right too, if you can get him to wake up Mark can't understand for the life of him why Jeff Miller takes so long to do this...haha. These guys are GREAT.
Thanks to Jeff also for his help in answering the questions I had!
We ended up getting almost all of the body work done, glassed in the spoiler, and filled in the "kidney beans" in the rear. I took the body to paint yesterday and was actually complimented on the body work, which felt good. I pick up the painted body on 4/11 and will be getting the windshield installed on 4/20, so it's going to get real busy around here. Car tentatively done in May...
Finished HSRF-ing my seams before they got there, and rough fitting the hood and doors

Thanks for the support! If you liked this one you'll REALLY like some of the other guys on here, my favorites so far have been mtwarog's "Matt's Gen 2 Coupe" and SeattleDad's "Help me spend" build thread. I just looked again for SeattleDad's and can't find it, idk why.
Man it's been a while since I posted on here, I have pretty much finished my coupe and need to get some final pictures up on here. Thanks for posting and giving me a reminder!
