What is the minimum wheel diameter with the stock brakes and what offset should be used.
I'm still in the planning stages at this point just want to know what to look for and not look at.

The back of the manual has a bunch of possible wheel/tire sizes and pictures of cars wearing them.
The minimum wheel diameter is going to be a function of what brake rotor diameter you are using
I am very earlier in build, but I only saw two sizes in manual.
I went with fronts of 17"x 9", with offset of +24mm/backspacing of 5.85" and rears of 17" x10.5 with +27mm/backspacing of 6.84" with the "stock" brakes from Factory Five and have plenty of room with those brakes. Looks like I could have gone 16" rims with no problems and perhaps even 15" but ......
However, I may want/need spacers on fronts at least, or steering rack limiters, or different offset (to late now for this) if I want to avoid interference with upper Control arm in tight turns.
I don't have access to the manual yet, that's why I was asking.
As for brakes, what comes with the kit is what I meant by stock.
I went with 15x10 on front and 15x12 on back with 4" BS, but I had to use spacers to clear the calipers.
Or better yet, get a PDF copy from another member here. I would offer, but my manual is over 10 years old. I am looking at buying a coupe kit later this year. A search on the Internet turned up links to the manual easily.

CJ Pony makes 1/4" spacers. I think I used 2 on each corner.
