Not yet, but that is my plan. 363 with stack EFI and just to be different, backed up with a 10R80 AT.
Regarding clearance, there are stack intakes that turn the inlets almost 90 degrees where they are offset and staggered to fit. This type of approach should eliminate clearance issues, I hope as otherwise we both have a problem. However, I am virtually sure someone has already done it. See link posted below. I found it using coupe and stacks as the search criteria. I will let you look for others, but all it takes is one example.
I order my coupe kit 4/5 just before the Spring sale ends. Dave Lindsey at FF said there is a price increase coming as well. So, right now is just about as good a discount as you are going to get for a while. The Spring sale discount is $1000 bucks toward a set of wheels or toward the 2015 IRS upgrade.

I did one with 8 webers. It didn’t fit. No even close. And the rear carb was half way under the cowl. I needed another inch to be comfortable. Then I found out I needed better air cleaners which were about 2 inches taller. Had to scrap the whole thing.

I'm sure people have done it but it will be tight and you need to measure carefully in advance. The hood on the coupe is lower than on the roadster. The original Daytonas had Webers and ran shorty stacks because of this issue. I have a 351W with Webers and they barely fit. If you want to go with stacks I'd utilize the 289/302 block for your build, since the deck height is about an inch lower than that of the 351. That'll give you a bit more room to work with. I don't know if shorter engine mounts are an option, but if so, that would help too.
I've attached a pic of 2287. Note the shorty stacks, and the engine is mounted farther forward than on a Type 65, so the stacks were better lined up with the hood bulge.

You could do what Dave Kindig did on one the CF1s he built, push the stacks through the hood.
But I get it, not period correct or expected on one of these cars.
I have found cross ram set up for the Chevy 350 from Jim Inglese, but not for the 302. I did find the Borla page for the 302, although not a quantitative analysis, their stack system appears to have a lower height than does the weber version. If webers just about fit with short stacks, the stack EFI should.

This is mine. 347 with Jim Inglese EFI. He supplies short stacks for the coupe which leaves 1-1.5 inches of clearance. Of course haven't fitted my body yet so can't confirm those measurements.
I was inspired by LateApex who used the same intake and didn't need to modify his hood.
