Anyone know how this is done with the matching leather/vinyl around the cockpit edge?
There doesn’t seem to be a local upholstery shop that knows how this is done.

There is a safety requirement in Australia to have the rolled edge of the dash padded. I have seen dash pads made from high density foam rubber layered over a fibreglass 'backbone' that marries to the dash radius. The completed dash pad is then finally covered in leather or vinyl.
It is attached to the dash by Velcro tape, or even Blu tack.
Some skip the fibreglass back bone and bond directly to the body. Have even seen it done successfully by shaping / shaving a pool noodle! No need for an upholsterer, easy to do in the garage at home.
