I called my current car insurance company yesterday and got a quote for my new MK4. I almost passed out. It was more a month than my other 3 cars combined. They obviously don't know or deal much with kit cars. Any personal recommendations?

you need to try a specialty insurer like hagerty. This might be an issue if you are using it as a daily driver
Check out Midwest Classic Insurance one of the forum sponsors.

Yep, call Robin. Make sure to tell him that you heard of them from the Forum (http://www.midwestclassicins.com/)

Thanks for all the help. I contacted Robin and it was much less. In fact, a year was less than 2 months through the other company.
I use Infinity Insurance written by a North Carolina agent. $180/year. She probably can't work with you in TX, but if you PM me with your contact info I'm sure she can direct you to the right person there. BTW, insurance premiums vary from state to state, so you may not get the same quote there. From what I've read, premiums are highest in Michigan and lowest in NC.
I got with Robin and it was around $275. I cant complain about that.
Also have a local agents Infinity NC policy. $250 with agreed value & no restrictions. Seems a lot of the Triangle Cobra coffee guys are using her.
